I love Chinese takeout. The seasonings, the textures, and even the cute cardboard containers bring a smile to my face. When I was little, my parents used to order it every Sunday for lunch. They still hold that tradition in Venezuela so when I go there and visit, I eat Chinese every Sunday.

Since I make Quinoa at home as a rice replacement, there’s always a big bowl in the fridge. The secret to fried rice is to use day-old rice or Quinoa. If you make it with a fresh batch, the rice/Quinoa will turn mushy and have the consistency of sushi rice instead of fried rice.

Hi there! Looking to make this for lunch tomorrow, but noticed that the quinoa has to be cooked the day before. How much does pre-cooking change the taste of the quinoa/dish?
Thank you!
Jasmine
Tiffany says
Hi Jasmine! the precooking doesn’t change the flavor much. It’s just the texture. When you have chilled quinoa the “fried rice” will be a bit looser
